What I mean by "kitchen impaired" is I’m like Charlie Brown ("all I know how to cook is toast and maybe popcorn"…) I’ll bet you I could burn water!! I’m looking to serve 4 people and all the recipes I found were for 10+ people (and they all contradicted each other-cover or don’t cover, high heat or low heat etc)

Here’s THE BEST suggestion I can offer:
Choose one or the other of those conflicting recipes and go with it.
A] IF you have to buy the whole rib roast [I don't see any reason why you shouldn't be able to ask the persons working in the meat departmetn if they will split the prime rib and make almost the size portion you need.]
B] Ask the persons if they will "bone it" – remove the bones for you, making it a boneless rib roast. You’ll be charged for the bones. Take them with you. Ask another Q how to prepare them.
C] Make the investment in a meat thermometer. Its a great tool to have in the kitchen.
D] Before putting the roast in the oven, make sure the meat thermometer is in the thickes part of roast. You’ll get a better reading as to the desired doneness or degree of cooking you’re looking for.
ALSO so you can easily see the thermometer when you open the oven.
IF you prefer eating well-done meat, rib roast is a total waste of your hard-earned money.
Rib roast should be at medium or rarer.
If you prefer medium-well or well-done meat, I suggest flank steak or London broil.
Whichever one you prefer, after removing the roast from the oven, before carving, make sure you allow the roast to rest for about 15-20 minutes. This allows the juices to redistribute through the roast AND the roast will relax, makng it easier to carve.
Being the novice you are, I suggest asking the folks in the meat department how to properly carve the roast. Its worth asking someone in-person who KNOWS HOW.
